In Austria and other German speaking countries they enjoy a pancake called Kaiserscharrn. It is a sweet dish made in times of celebration. They are often sold on Christmas markets and at Easter time. They are light and fluffy. Mhhh...yummy!
Kaiserschmarrn are made fluffy by separating the egg yoke and whites and then whisking the whites until they are firm. The egg whites proteins will stick together, becoming stiff trapping air bubbles. Making the pancake light and fluffy when cooked. You have to beat them till they form towers and then stop. Over beating and the air will escape and you'll get a flat pancake.
Grated potato with apple sauce sounds strange, but if you think that one of the German words for potato is Erdapfel directly translating as Earth apple. It means Earth apple with apple. Why wouldn't they go well together?
