What is not a pancake?

Lets do the pancake test on the Chinese dish Peking duck. This is very popular around the world. It is served wrapped in po-ping often translated as pancakes. They are very thin and used to hold the filling together but are they really pancakes?

Make a batter
Make a batter .     A true pancake is starch based. These are flour based. So they do meet this test. However, they are made into a batter but are more firm. These are made into a dough.  
Pour onto a flat surface
Cook on a flat surface     The dough is rolled flat and then added to a pan or steamer. Not poured onto a flat surface like a real pancake.    
Cook until firm
Cook until firm     The pancakes are cooked until firm. Both meet this criteria.    
Chinese pancakes are really thin flat breads
Pour as a batter          Remember there are four things that a pancake must be:  It must be starch based Pour as a batter Cook on a flat surface Cook until firm.

The Chinese pancakes are actually a thin rolled flat breads and not pancakes.
